manifest.xml: drop composer hal

to fix the following failure of the vts_treble_vintf_vendor_test module
    DeviceManifest/SingleHidlTest#HalIsServed/android_hardware_graphics_composer_2_3__IComposer_default_8
    DeviceManifest/SingleHidlTest#InterfaceIsReleased/android_hardware_graphics_composer_2_3__IComposer_default_8

As it's changed to use the drm_hwcomposer hwc3 implementation now.
